Nagaland in North Eastern India, is home to the Bhut Jolokia or ghost pepper, one of the hottest chilli’s in the world at 855,000 SHU on the Schoville Scale. All the areas in Nagaland have their own cuisine, and they use a lot of meat in their dishes. Naga dishes use copious amounts of ghost peppers, ginger and garlic. Needless to say it is a very hot curry. Try it with chicken and lamb but especially with slow braised pork. We have a regular customer who makes a lovely vegetarian version with sweet potato, lentils, spinach and chickpeas.
