Rajasthan, the land of the kings, palaces and hilltop forts, mostly desert. Due to its mountainous terrain the locals use a variety of wild herbs, rice and dried pulses in their dishes – foods that can easily be preserved. Rajasthanis are also serious meat eaters with dishes like junglee maas, a perfect combination of meat, chillies and spices. This is a speciality curry sauce from the Province of Rajasthan.
